鉄なべ餃子”Tetsunebe Gyoza(Iron pot dumplings)”

A Kitakyushu gourmet dish consisting of small gyoza densely packed on a piping hot iron pot.

They are served at around 40 stores in Kitakyushu alone.

The appeal of iron pot gyoza is their bite-sized size and the piping hotness of the iron pot.
They’re bite-sized, about half the size of regular ones, so they don’t lose their juices and the residual heat keeps them from cooling down!

It’s appealing to change up the flavor with yuzu pepper and other ingredients.

There are some restaurants in Fukuoka City that serve it as well.
In Fukuoka City, it is standard to eat sweet and spicy chicken wings with iron pot gyoza.

The Yawata Daitetsu Nabe, owned by the Yawata Gyoza Council, is a disc-shaped iron pot made with the cooperation of Nippon Steel Sumitomo Metal Yawata Steel Works that can be used for events and can cook up to 1,000 gyoza.

<The Story of the Third Generation at Main Store Tetsunabe>

Iron pot gyoza was invented by founder Haruko Uku in 1958.

Originally, the business ran a chicken and egg bun business in front of Orio Station, but when it shifted to a gyoza restaurant, it was troubled by the fact that serving gyoza on a plate would inevitably cool down.

Nukuko’s older brother was on a business trip to Ginza, Tokyo, and was deeply moved when he saw Neapolitan pasta served on a piping hot iron plate.

Neapolitan is a ketchup-based pasta dish that originated in Japan.
It’s a popular menu item at coffee shops.

Inspired by the hot plate Neapolitan he had eaten in Ginza, he decided to use an iron pot instead of a hot plate, so that the food could be cooked and served directly to customers, as water would overflow when added.

Later, it gained a reputation for being an inexpensive way to provide stamina to workers at the nearby Yahata Manufacturing Co., Ltd., and spread throughout Fukuoka Prefecture, primarily in Kitakyushu.
