Cold meat soba originated in Kahoku Town, Yamagata Prefecture, and in the Taisho era, people would eat soba noodles with horse meat on top.
During the war, horses were mobilized, so people started serving meat soba using chickens, which were a slightly cheaper substitute.
That was the beginning of the cold meat soba we have today.
At the time, meat soba noodles were also eaten as a snack with alcohol, so if you ate the meat first, by the time you finished the soba noodles would become soggy, so they were made cold to prevent them from becoming soggy.
