Tenshinhan, which was created at Rai Raiken in Tokyo, started out as a dish of crab meat on rice topped with sweet and sour pork sauce.
At the time, both crab and eggs were rare and Tianjin rice was a luxury dish, so it did not become a popular menu item in Tokyo.
On the other hand, the Tianjin rice dish created by Taishoken in Osaka uses river shrimp found in the river mouths and coastal areas of Osaka city instead of crab, and combines them with eggs procured cheaply from China to create a cheap Tianjin rice dish that was easily accessible to the general public.
Additionally, the filling is cooked with a light seasoning of soy sauce and salt to bring out the umami flavor, which is thought to have suited the tastes of the people of Osaka, whose culture places great importance on dashi, and therefore became popular.
In the Kanto region, a sweet and sour bean paste containing ketchup is used, while in the Kansai region, a lighter paste made with soy sauce and salt is used.
