A beloved gourmet dish shared by the three Tokai prefectures of Aichi, Gifu, and Mie.
A coffee shop gourmet dish where Neapolitan spaghetti is placed on a piping hot iron plate and an egg is poured over it!
“Chinchikochin” means very hot in the local dialect.
Napolitan is a type of pasta dish made by stir-frying boiled spaghetti with ingredients such as onions, green peppers, and bacon, and seasoning it with tomato ketchup.
It is a pasta dish that originated in Japan.
This gourmet dish originated in Nagoya, but is also popular in coffee shops in Gifu and Mie!
A collaboration between the three Tokai prefectures is made possible by using iron plates, a specialty of Kuwana City, Mie Prefecture, and Gifu’s famous “Akegata ham” as an ingredient!
Kuwana City, Mie Prefecture, is a thriving casting town, and also produces iron plates for steak plates and other dishes.
It has been commonly used in Nagoya for the past 60 years.
We can now see that it all started with Italian teppan cuisine.

<A story from the owner of Cafe Yuki, the birthplace of teppanyaki Italian cuisine.
Teppan Italian cuisine was invented by my father, the previous owner, in the early 1960s.
When my father went on a trip to Italy, the steak was served on a hot plate and it never got cold, which I thought was really delicious.
So, after returning to Japan, he wondered if people would be happy if he served the spaghetti he makes on a hot plate.
This was well received by customers from Nagoya who lingered in cafes, and it spread to Aichi, and then to Gifu and Mie.
