Tofu chikuwa is a local tofu that is especially eaten in central and eastern Tottori Prefecture.
Firm tofu and white fish paste are mixed in an approximately 7:3 ratio and steamed.
Tofu chikuwa is a healthy food that was born as a result of our aim to be frugal and thrifty.

It is said that chikuwa began to be eaten to this extent in Tottori Prefecture towards the end of the Edo period.
Until then, Tottori had been struggling financially and the development of its fishing ports had been delayed, meaning that not many fish were caught.
Lord Ikeda, the feudal lord of Tottori, ordered people to eat tofu instead of fish, and tofu chikuwa was born out of a spirit of frugality.
Tofu chikuwa spread among the common people, and perhaps that frugality paid off.
From then on, the development of fishing ports progressed, the production of fish chikuwa increased, and the people of the prefecture became chikuwa-loving.
