岩国寿司<Iwakuni sushi>

“Iwakuni sushi” is served on special occasions and celebrations, and is made by pressing sushi into a special wooden frame.

We get carpenters to make special wooden boxes and other tools to create the huge ones.

It is often made at home, but there are over 15 restaurants in the Iwakuni-Kintaikyo Bridge area that serve it, so it can also be eaten at restaurants.

The image is like a combination of chirashi sushi and pressed sushi.

The ingredients and vinegared rice are layered in several layers, with sunny lettuce used to separate each layer.
The finished product is large, but each layer is cut into pieces, so one portion is normal size.

Previously, banana leaves were used to separate the vegetables, but many people from other prefectures ate them by mistake, so they were changed to sunny lettuce around 1965.

The ingredients and seasonings vary from household to household and restaurant to restaurant, but Iwakuni lotus root, a local specialty, is an essential ingredient!

When making it at home, you can easily make mini Iwakuni sushi by using paper cartons.

In Iwakuni City, some newlyweds cut Iwakuni sushi instead of cutting the wedding cake.

It is 180cm wide, 90cm long and 40cm high, and some people are even attempting to break the Guinness World Record.

It is a national dish that is also served in school lunches.

A speech by Tomonori Matsuoka, deputy director of the Iwakuni Chokokan Museum

Iwakuni sushi was born in the Edo period, and there are various theories about its origins.

The most likely one is that it was influenced by Osaka’s box sushi.

It is said that when government officials and townspeople from Iwakuni were seconded to Osaka, they encountered Osaka’s box sushi and brought the technique back to Iwakuni, where it gradually became larger to accommodate larger groups.

It is said that the reason it is five-tiered comes from the five arches of Iwakuni’s Kintai Bridge, but the reason is not clear.

However, is there something about the number five that connects the people of Iwakuni?
