Beppu cold noodles are a local noodle dish from Beppu that was first served by a chef who returned from Manchuria.

The chewy noodles and soup stock are light and made with beef stock and other Japanese flavors such as kelp and bonito, making them completely different from Korean hiyashi noodles.

The light Japanese-style soup captivates Kenmin.

It is served at about 30 restaurants in Beppu city.
In Beppu, hiyashi noodles are a standard menu item not only at yakiniku restaurants and specialty shops, but also at ramen shops.

At Beppu cold noodle restaurants, the hot version, “warm noodles,” which are simply heated, is also a standard.

Beppu cold noodles first appeared in the 1950s.
The first owner came to Beppu from Manchuria after the war and opened a restaurant near Kaimonji Park, serving cold noodles, which were rare at the time.

Beppu was close to a fishing port and had an abundance of seafood, so it is said that when he served authentic Korean cold noodles blended with a Japanese-style dashi broth made from kelp and seafood, it became popular and Beppu cold noodles took root in the city.

After that, in 1970, Kogetsu named the locally popular cold noodles “Beppu cold noodles,” and Beppu cold noodles became popular throughout the city.
